Low Fat Chili Recipe

I just made this Low Fat Chili Recipe and I like it because you have plenty of veggies left over to make a 2nd batch. And if any of you are Weight Watchers, this recipe is equal to 1 point per serving. Serving size = 1 cup. Try to get low sodium if possible whenever you are making soups. Sodium or salt in the body causes you to retain water. If you struggle with managing blood pressure, skip the salt or be sure to look for Low Sodium or 50% or 33% less Sodium on your canned goods.

You will need 1 skillet to brown your meat of choice (optional) and 1 kettle to simmer.

Ingredients:

1 tbsp olive oil

1/2 packet chili seasoning

1 clove garlic – squeeze through garlic press

Ground black pepper

1/2 cup salsa (mild, medium or hot)

1/2 cup water

1 onion – chopped into big chunks (yellow or sweet)

1/2 green pepper – chopped into big chunks

1/2 red pepper – chopped into big chunks

1 package frozen kennel corn or 1 can kennel corn, drained (low sodium)

3 cans chili ready crushed Tomatoes

Optional:

Kosher salt to taste
1/2 lb. to 1 lb. of Lean Turkey, Lean Ground Beef or Meat-free Soy bites
**One pinch fat free cheddar or mozzarella cheese (This increases Weight Watcher points from 1 to 3 pts. / cup)

How to make Low Fat Chili:

In the kettle, combine 3 cans of chili ready tomatoes, kennel corn, green and red peppers and pepper to taste.  Simmer over medium heat.

In the skillet, bring olive oil to a simmer in pan on medium high heat. Squeeze garlic clove through garlic press; add meat of choice (optional) and stir together until meat is cooked through. Add chopped onion, 1/2 cup of water, 1/2 packet of chili seasoning and 1/2 cup of salsa. Stir until well blended and meat and onions are coated. Simmer 5-10 minutes.

Now combine: pour meat/onion mixture from skillet into the kettle. Mix together and allow to simmer, covered, for at least 30 minutes before serving so the peppers and corn are soft.

Pour 1 ladle serving (approx. 1 cup) into bowl.

Optional: Top with one pinch fat-free cheese.

Serve.
